A salad that I did it with ingredients from my garden and is very tasty... it makes you think of the wonderful places in the Mediteranean...
4-5 fresh tomatoes, finely sliced
4 fillet anchovies
a good handful of mix herbs: fennel, basil, mint and parsley leaf, finely chopped
grated parmesan cheese
a few chives leaf, finely sliced
1 cloves od garlic, finely chopped
a few red currants
sea salt & freshly ground white pepper
extra virgin olive oil
I sliced tomatoes and season with sea salt and freshly ground white pepper and let to rest a few minutes. I like to do that for the juice.
In a large bowl add all ingredients and tomatoes, then mix.
Serve with toasty bread and sprinkle with extra virgin olive oil and parmesan cheese.
