This recipe makes around 6-8 of these merengues.
You can use any other berries and also could use some stewed fruit...
Whip the egg whites until they stand in peaks. Gently whip and fold in the sugar gradually. You may whisk again if the peaks aren't strong and glossy. Spoon or pipe the mixture onto a baking tray lined with baking parchment.
Bake in the oven for 3hrs.
Whip the cream. Hull all the strawberries and slice half of them. Whizz the other half in a blender and add to the cream. Mix together, add the sliced strawberries and mix again.
Sandwich the cream between two merengue nests.
