When making merengues; make sure that all your equipment is clean and free from grease/detergent. Also, do not whip the eggs too much after adding the sugar. It is also essential that the oven is between 90 C and 110 C. This recipe makes around 6-8 of these merengues. You can use any other berries and also could use some stewed fruit...
Ingredients
4 egg whites
8oz caster sugar
1 400g punnet of strawberries
300ml double cream
Method
Preheat the oven to 100 C
Whip the egg whites until they stand in peaks. Gently whip and fold in the sugar gradually. You may whisk again if the peaks aren\'t strong and glossy. Spoon or pipe the mixture onto a baking tray lined with baking parchment.
Bake in the oven for 3hrs.
Whip the cream. Hull all the strawberries and slice half of them. Whizz the other half in a blender and add to the cream. Mix together, add the sliced strawberries and mix again.
Sandwich the cream between two merengue nests.
