Milinciani a Canazzu

As I stated in my blog, this was the first think I ever ate in Siciliy. What made it most special was that it was made in someone\'s kitchen as I sat and watched and that I was famished!

Ingredients
1/3 cup extra virgin olive oil 1 large onion chopped
1 large eggplant large dice
2 large red sweet bell peppers cleaned, seeded and coarsely chopped
3-4 cloves of garlic chopped
3-4 hot dried chilis chopped (more or less to taste• If availabe, use Calabrian chilis)
1 28 0z can tomatoes chopped or crushed by hand
2-3 large potatoes thickly sliced.

Method
Heat oil in large pot and add onions, eggplant and peppers. As soon as they start to soften, add garlic and chilis. As the garlic is cooking, add tomatoes and potatoes. Keep simmering and stirring until potatoes are tender. (You may need to add water at times.) Season with salt and pepper.
