Mincead ball soup

300 g mixed minced meat(veal & turkey breast or pork)
1 onion, finely chopped
3 carrots, finely sliced
2 stick of celery, finely sliced
1 stick parsley, finely sliced
1 stick parsnip, finely sliced
a good handful of risotto
4-5 normal potatoes, peeled and sliced in little pieces
1 cup of double cream
2 egg yolks
a few dill, finely chopped
a few parsnip leafs, finely chopped
sea salt & pepper
In a big pot add 3,5 l water on high heat.
Mixed minced meat with risotto, 1 egg and season with salt and pepper. Shape your minced in little ball, then add in pot and let to boiled. When is start to boiled add celery, parsley, onion, carrots and let to boiled. Season with salt and pepper. When the veggies is half boiled put inside potatoes too, cover with lid and let to cook on medium heat.
Mixed double cream with egg yolks and season with salt and pepper.When your soup is finish add 1 ladle of soup to mixed cream and egg yolks and whisk, then add all on your soup. Season with dill and parsnip leafs and serve with baked chili (baked chili, peeled, sliced and marinate on extra virgin olive oil). Optional sprinkle lemon juice on soup.
