Minute steak with baked root vegetables

Root vegetables are sometimes almost forgotten in cooking. Despite the fact itīs both inexpensive and healthy for you. It has a high vitamin and mineral content and in this dish a low fat content. Itīs also easy to make, but above all itīs really tasty. Root vegetables are an important ingredient in traditional swedish home cooking.

Ingredients
Serves 4

4 pieces of Minute steak

Swede

Parsnip

Celleriac

Carrot

Clove of garlic

Parsley

Butter

Olive oil

Pepper

Salt

Method
Make your own herb butter by mixing butter, chopped parsley, squezzed garlic and salt together. Lay the mix on a plastic film and shape it round, like a roll. Put it in the freezer. This is that kind of stuff that itīs great to have ready at home!

The salad is made of shredded cabbage, carrot and parsley. Mix it together with 2 parts of olive oil, 1 part of vinegar and 1 part of water. Flavour with salt and pepper.

Set the oven on 200 degreeīs celsius. Take an equal amount of each of the different root vegetables. Peel and chop them, if you use potatoes cut them instead in wedges and let the peel be on. Put some olive oil in a tin and mix the root vegetables with a couple of finely cut clove of garlic. Salt and pepper. Take them out when they are soft and lightly brown, about 30 minutes.

While your waiting, flatten the minute steaks so they get nice and thin. When the root vegetables are finished start fry the minute steak in a well heated pan. Remember, about a minute itīs all that needs, therefore the name! If you have it at home, sprinkle fresh herbs like chervil, some thyme and parsley on the vegetables. Serve immediately with herb butter.
