Mixed Bean Casserole

Mixed Bean Casserole

Ingredients
1 tin of adzuki beans
1 tin of flageolot beans
1 tin of pinto beans
1 tin of haricot beans
1 tin of cannellini beans
1 tin of borlotti beans
1 tin plum tomatos
1 tablespoon marmite
4-6 segments fresh garlic (chopped)
4-6 large potatoes
1 whole onion (diced)
3-4 celery sticks (chopped)
3-4 carrots (chopped)
1 veg oxo cube
1-2 teaspoons salt
1-2 teaspoons black pepper
2-3 tablespoons veg oil or olive oil
2-3 bay leaves

Method
SERVES 4 people
Heat big pan with oil for 1-2 minutes
Add half chopped garlic and chopped onion 1-2 minutes
Add 1 tin tomotoes cook for 3-4 minutes
Add crumbled veg oxo cube cook for further 2 mins
Add 1 teaspoon salt and 1 teaspoon pepper (cook for further 2-3 minutes) taste, if not enough garlic or salt/pepper and the other half (use to your tasting)
Add 1 tablespoon marmite, stir and cook for a few minutes
(drain all your tins of beans with water in a sieve) add all your beans
Add your chopped potatoes
Add your bay leaves
Once the ingriedants bubbling then lower your heat until stopped bubbling-simmer for one hour and transfer to electric casserole dish for a further 3 hours (if not got electric casserole dish simmer (slowly cooking) for 3 hours with a lid on. This dish is good for winter and tastes even better the next day. Enjoy

Its a bit slack of monsieur oliver to miss out key information here - as above - wheres the liquid, and what about the celery and carrots?

It says add beans with water, and tin of tomatoes gives liquid...but you re right, if you add stock it is juicier and you don't have to stir it all the time...add some white wine to reduce..even more yummy!!!

Confused too...no mention of vegetables and no liquid. Am adding stock constantly!<br />

Confused! How can the ingredients bubble when there is no liquid?! Do you add water/stock and if so how much how much? Also, when do you add the rest of the vegetables?
