  • 2 large (or 4 small) red peppers (roasted & skins removed)
  • 1/2 cup of walnuts, chopped roughly
  • 1-2 cloves of garlic, sliced
  • 2 tsps (or more) harissa
  • 1/2 tsp cummin
  • 1/2 cupful of fresh breadcrumbs, soaked in water then squeezed
  • A few of tbsps of olive oil
1. Place the walnuts in a food processor and grind till quite fine.
2. Add the rest of the ingredients, season well with salt and pepper and process till you have a nice thick paste (not too smooth). Place in the fridge for a few hours to allow flavours to develop. Bring back down to room temperature before serving.
3. Lovely served as a starter with flatbreads or even as a light lunch or snack.

Method
