Muhammara (Middle Eastern Pepper Dip)

Ingredients
2 large (or 4 small) red peppers (roasted & skins removed)
1/2 cup of walnuts, chopped roughly
1-2 cloves of garlic, sliced
2 tsps (or more) harissa
1/2 tsp cummin
1/2 cupful of fresh breadcrumbs, soaked in water then squeezed
A few of tbsps of olive oil

Method
1. Place the walnuts in a food processor and grind till quite fine.
2. Add the rest of the ingredients, season well with salt and pepper and process till you have a nice thick paste (not too smooth). Place in the fridge for a few hours to allow flavours to develop. Bring back down to room temperature before serving.
3. Lovely served as a starter with flatbreads or even as a light lunch or snack.
