  • 600g of Chicken breast cut into cubes
  • 1 tbsp of natural yoghurt
  • 2 tsp of rice flower
  • 1 pack of fresh methi masala curry paste sauce from (www.curryfusion.net)
  • wedge of lemon
  • chopped coriander for garnish
  • mixed salad leaves
  • cocktail sticks
Skewer the chicken pieces, coat it with rice flower and add the yoghurt to 1 packet of methi masala curry paste/ sauce. Gently cover the skewered chicken with the marinade. Marinated over night or for 30 minutes. Cook in the oven at 180C for 20 minutes in a backing tray covered over with foil to retain moisture. Remove the foil and drive off the liquids till surface is slightly brown and crispy. Serve in a large flat dish on a bed of salad leaves. Give it a Squeeze of lemon and garnish with coriander. Job done! ..its healthy, big on authentic flavours, beautifully appetizing and a great start to a dinner party! Give it a go it really is simple but very very effective. Your'guests will think a top chef's been in your kitchen!

Its the perfect starter for a dinner party, tasty big on authentic flavours. I made this last night for Susan's VIP guests. Presented on a bed of fresh mixed salad leaved with a sprinkling of lemon. It was picked clean and one guest commented it was perfectly marinated with abundance of fresh flavours. its very easy to prepare, ready to go into the oven in 10 minutes.

Method
