Mushroom Cakes in basil sauce ideal for Vegetarians. Sorry about the poor photo image.
Ingredients
Diced Mushrooms
1 finely chopped Onion
Chives
Garlic
Breadcrumbs
Milk
Egg
Self raising flour
For The Sauce.
Butter
Chopped Shallot
Sliced Mushrooms
Chilli or Tabusco
Tomato Passata
Pesto sauce
Salt & Pepper
White Wine
Method
Melt butter in a large pan add diced Mushrooms,finely chopped onion and Garlic\"Sweat\"until soft,leave to cool.Soak breadcrumbs in milk and Squeeze dry.Add to Mushroom mix add Chives,self raising flour & beaten egg.Mix well,season,shape into cakes & fry in oil & Butter.
For The Sauce.
Butter,Chopped Shallot,Sliced Mushrooms,Chilli or Tabusco,White wine,Toato passata,pesto sauce,Salt & Pepper-Simmer liquid to reduce,& add to\"sweated\"shallot in Butter & sliced mushrooms,add wine then reduce,then add passata & pesto & heat through.Serve around mushroom cakes.
