Mushrooms soup cream

a good way to whet your appetite for mushrooms, is a cream soup, made simple and easy...
400 g different varieties of mushrooms, sliced
100 ml cream
1 onion, finely chopped
2-3 vegetable or chicken stock ladles
1/2 glass white wine
sea salt and fresh ground pepper
grated parmesan cheese
1 tbsp butter
extra virgin olive oil
In a large pot heat olive oil and butter. Add mushrooms and onion, finely chopped and stir occasionally. Add thyme and season with sea salt and fresh ground pepper.
Add wine and let to evaporate alcohol then put cream. Let to cook for a few minutes. Add one ladle o stock and let to cook. Keep a few piece of mushrooms for serve.
In a blender add the mushrooms soup and pulse a few time to obtain a cream. Put back in pot cream and let to cook. Add mushrooms piece, 1-2 ladles of stock and to a boil. Taste and season if is necessary.
Serve with grated parmesan cheese and sprinkled with extra virgin olive oil.
