Add wine and let to evaporate alcohol then put cream. Let to cook for a few minutes. Add one ladle o stock and let to cook. Keep a few piece of mushrooms for serve.
In a blender add the mushrooms soup and pulse a few time to obtain a cream. Put back in pot cream and let to cook. Add mushrooms piece, 1-2 ladles of stock and to a boil. Taste and season if is necessary.
Serve with grated parmesan cheese and sprinkled with extra virgin olive oil.
