Mushrooms stuffed with feta and herbs

Its an ideal side dish for vegetarians people...

Ingredients
4 serves
8 big mushrooms(portobellos)
200 grms feta cheese(prefer real thing not just a white cheese)
sea salt
pepper
thyme, mint,oregano and basil ( a handful)
olive oil
lemon juice

Method
Well ..........cooking mushrooms its not so easy thing...Mushroom is a delicate food that can be cooked in many ways, and can give amazing dishes....Albeit if you dont be careful with them, the result will be a disaster.
Treat them gently with no water (i think they hate it) and just swept their outer surface with a towel, or a moist paper....dont put them under water.
Now.....throw their stick...its an non tasty part of the mushroom, with wooden and hard texture.
Seasoned them with sea salt and olive oil. Use a cooking brush, to spread some olive oil in their outer surface.
Mash the feta cheese in a utensil, and add the chopped herbs in there. Mix them well and in the end add 2 table sp olive oil, in this mixture.
Stuff with this mixture the mushrooms, and place them over the fire(charcoal).
During the baking time,(approximately over 15 minutes), liquids of the mushrooms will be expelled in the inner surface of the mushroom....this will turn the mushrooms as i told you a non tasty thing....to avoid this, penetrate the mushrooms with a fork (gently). The liquids will drain down, and the mushrooms will be baked, keeping their taste....
Serve them with chopped herbs and drizzle some lemon juice on top
