2.In a bowl, place the sugar, diced butter, lemon zest and juice and place bowl over simmering water in a saucepan
3.When the butter has melted, add well-beaten eggs and continue to stir with a wooden spoon until the mixture becomes thick and custard like.
4.Don't let the water underneath boil too rapidly or let the mixture get too hot or the curd will separate and curdle.
5.When the mixture is cooked, allow to cool slightly.
