  • 275gms Unsalted Butter
  • 140gms Sugar
  • 2 Large Lemons (grated zest and juice only)
  • 4 Eggs
1.Grate rind of lemon and then squeeze juice.
2.In a bowl, place the sugar, diced butter, lemon zest and juice and place bowl over simmering water in a saucepan
3.When the butter has melted, add well-beaten eggs and continue to stir with a wooden spoon until the mixture becomes thick and custard like.
4.Don't let the water underneath boil too rapidly or let the mixture get too hot or the curd will separate and curdle.
5.When the mixture is cooked, allow to cool slightly.

This recipe is over 80 years old and is still a crowd favourite. It's great on toast, crumpets, muffins and scones. But it also makes a fabulous filling in a sweet tart shell. It is the easiest lemon tart you will ever make! Oh, and it lasts in the fridge for a couple of months too...

Method
