My kickin\' Papaya Salad

This salad is by far my favourite! it smacks your lips with Birdseye chillies then balances with the sweet basil and tomatoes, the kickin\' combination of salty Thai fish sauce and tangy lime juice works so well, it has great texture with the crunchy nuts, and is so easy to make.............absolutely delicious!

Ingredients
1 carrot
10 sugar snap peas
1/2 green papaya
2 birdseye chillies
small handful of mint leaves
small handful thai basil leaves
10 cherry tomatoes, halved
100g honey roasted cahews
3tbs fish thai fish sauce
1 lime, juiced

Method
to start peel the whole carrot to give you long ribbons, grate the papaya on a box grater into small strips, combine the carrot with the grated papaya, torn mint and basil leaves, sliced Birdseye chillies, split sugar snap peas, halved tomatoes and half of the nuts, combine the Thai fish sauce with the lime juice, dress the salad and garnish with a few baby basil leaves and scattered nuts.......enjoy!
