No Knead Bread

Crusty and soft on the inside. A must try!

Ingredients
3 cups Flour all purpose
1/4 teaspoon yeast
1 1/4 tsp salt
1 1/2 cup water

Method
Mix together all dry ingredients, now add the water and mix it up again with your hands.
You will get a VERY sticky ball of dough. If it is not sticky, add some more water (about 1/4 cup)

Now put in a bowl and COVER for 12-15 HOURS (in a warm draft free place)

Next take your sticky dough, which should have doubled in size.
Plop your dough on a counter lightly floured and fold the dough in half, then half again the opposite way (like a book). You should have a soft surface on the bottom and the folded dough on the top.
Sprinkle Wheat bran on a tea towel (lots) this will help it not to stick to the tea towel. If you have not got wheat bran, use flour. Put your dough SEAM SIDE DOWN on the towel and sprinkle more on top again.

Have your oven pre heated to 500 F (very high) and the rack on the lowest level. At the same time put your dutch oven or cast iron pot to pre heat (with the lids).
Once oven has reached tempurature, remove the pot and plop in your dough (seam side up, this will give it a nice crack on the top), cover it with the lid and bake covered for 30 minutes. Then, remove the lid and bake for another 10 minutes to give it more color.
