I wanted to make muffins today, but run out of eggs... I tried to make an eggless batter - hey, it worked! They are a bit more chewy and do not rise quite as well as \"normal\" muffins, but they are good! :)
Ingredients
110 g plain wheat flour
90 g full spelt flour
100 g ground almonds
3 tsp baking powder
1/2 tsp baking soda
1 tbsp vanilla sugar
100g raw cane sugar
3 tbsp vegetable oil
(I used 1 tbsp argan oil and 2 tbsp rape seed oil)
150 ml full fat milk
150 g yoghurt
2 bananas, smashed with a fork
Method
Preheat your oven to 180° C.
Mix flours, almonds, baking agents in one bowl.
Mix other ingredients in another bowl and stir until sugar has resolved.
Carefully fold under the flour mixture.
Put some paper cups into the muffin pan and fill in the batter.
Put in the oven for 20-25 min and take out then.
Let the muffins cool down.
Decorate by sprinkling a bit of icing sugar on top.

This is a very good recipe as my brother, is allergic to a lot of things especilly eggs so this helps so much.
I have also been looking for other diffrent types of muffins and they are great so thank you.

I'm looking for a savoury muffin recipe with either buckwheat flour, millet flour, besan flour or almond flour and no sugar/honey/dried fruits.
All dairy and eggs are fine. Chicken is fine. , neffNo meat or seafood.
My 16 year old son is pre-diabetic.
