Olde English Chutney

An old recipe of my mothers, keeps well infact gets better with keeping.

Ingredients
1 lb Onions
1 pint cider vinegar
10oz ready to eat Dried Apricots
10oz ready to eat Dried Prunes
8 oz Dried Dates
8 oz Raisins
1lb brown sugar
1 thumb size piece of Ginger grated
pinch salt

Method
Chop the dried fruits and onions in a food processor.
Put the vinegar in a large saucepan with the salt and the ginger, bring to the boil, stir in the chopped dried fruits and onions together with the sugar.

Simmer very gently without a lid for about 1½ hours, or until the chutney has thickened its ready when you are able to draw a spoon across the surface of the chutney and make a trail that doesn\'t immediately fill up with surplus vinegar.

Spoon chutney into warmed jar, seal and leave for a month or two.
