  • 4 bone-in chicken breasts
  • 1can large black olives, drained
  • 1 can uncured green olives, drained
  • 2 lemons
  • 4 oz. feta cheese, crumbled
  • Olive oil
  • 2 sprigs fresh rosemary
  • 2 cloves garlic, minced
  • Salt
  • Pepper

Heat oven to 350 degrees Fahrenheit.
Drizzle some olive oil on the bottom of a large roasting pan.
Cut 1 1/2 of the lemons into slices, lay slices on bottom of roasting pan.
Season both sides of chicken with salt and pepper. Place chicken on top of lemon slices.
In a large bowl, combine the 4 tbsp olive oil, rosemary, garlic, juice from the remaining 1 1/2 lemons, and drained olives. Toss well to coat. Pour olives over the chicken.
Bake 30-40 minutes.
Top with some crumbled feta cheese.

Note: you can add some quartered Yukon Gold potatoes to the pan also.
