Ingredients
6 onions sliced
20 gr butter
5 cloves of roasted garlic
seasalt,peper, provencal herbs (dried)
stock from beef about 1 liter
tblsp flour
tsp maple sirup
half tsp buisman
tblsp cognac
extra water when needed
Method
melt onions in melted butter untill brown
add the garlic and melt that with it
add the maple sirup and some salt and peper
Let it simmer and after about three minutes add the flour and keep on stirring so it won\'t burn.
Add the stock. Add some extra water when it\'s too strong
Use some of the provencal herbs to taste so just add a small bit and keep on tasting untill it\'s to your liking
Then about half of tsp of buisman.
Buisman is the coffee extract from the bruning of coffee beans. It\'s a kind of glucose with coffee taste and will make the soup nice golden and gives an extra bump to the taste.
Add a splash of cognac and let the soup simmer for about ten minutes.
If you like it, make some baquette, slice it and bake it in the oven with some cheese on it and put it in the bowl of onion soup before you serve it
