6 Sliced Onions (diced)
1 Red Pepper ( diced)
1 Yellow Pepper (diced)
2 Leeks (Sliced)
2 Carrots ( peeled and diced)
2 Courgettes ( diced)
2 Gloves of garlic
cheddar cheese (How much you use is upto you)
1 Pint of vegetable stock
Dash of Worcestershire sauce
Salt & Pepper
In large saucepan, melt butter. Add Onion\'s,Leek\'s,Carrot\'s,pepper\'s & garlic,Saute until veggies are tender.
Add the vegeatable stock.bring to simmer,don\'t over boil,Incorporate the cheddar cheese mixture into the vegetable\'s and stock and whisk until the cheese has melted.
Using a food processer add all the soup and thicken until smooth,then transfer back to the pan to warm up,then serve.
