This is a super easy and fast recipe with tons of flavor. ** You might be saying: \"OMG Dark meat chicken?! Isn\'t that really loaded with fat and really bad for you?! To which I would say: \"No! It\'s actually BETTER for most people than white meat chicken. It has GOOD fats. More Omega 3 and 6 fatty acids, more vitamin B6, B12 and many other vitamins a minerals.\" Plus, the ginger and orange will help emulsify the fats so you get even more of the nutrients out of it. Great stuff! That\'s not to say you should have it every night. Mix it up.
Ingredients
About 1 - 1.25 of Organic, Free range (of course) DARK MEAT chicken.**
2 cloves chopped garlic
1/2 Tsp• Ground Turmeric
1/4 Tsp• Ground Cardamom
1/4 Tsp• Sea Salt
1/4 Tsp• Ground Black Pepper
3 Tbsp• Olive Oil
Juice from Half of an orange (save the peel!)
1 Tbsp• Grated fresh ginger
3/4 Tbsp• Coriander seeds•
Method
In a bowl combine these this stuff....
About 1 - 1.25 of DARK MEAT chicken.**
1 clove chopped garlic
1/2 Tsp. Ground Turmeric
1/4 Tsp. Ground Cardamom
1/4 Tsp. Sea Salt
1/4 Tsp. Ground Black Pepper
1 Tbsp. Olive Oil
Juice from Half of an orange (save the peel!)
1 Tbsp. Grated fresh ginger
Make sure the chicken gets well coated.
Now let that sit while you start cooking your grain of choice. Mine was millet.
In a pan....
Combine 2 Tbsp. Olive oil with 1 clove chopped garlic and 3/4 Tsp. Coriander seeds (if you can, grind whole seeds with a morter and pestle)
Heat until you hear it sizzle.
Add chicken. Shave some orange peel over chicken.
When chicken is almost done steam you veggie of choice. Mine was kale with garlic, olive oil and lemon. The lemon helps release the magic that is chlorophyll.
