Oriental Zucchini Salad

Easy, summery and yummy...for everyone who like to try something different

Ingredients
For four people:

For the Turkey Kofta:
500g ground turkey meat
1 egg
handfull breadcrumbs
Salt and Pepper
1tsp• Chili powder
3 EL Sesame Seeds
Oil to fry

For the Couscous-Zucchini Salad:
4 Mini-Zucchini cut in thick slices
3 Nectarines (or around 8 Apricots) cut in small wedges
3-4 chopped Green Onions (the white and the green parts)
A handful fresh, chopped Cilantro
A handful fresh, chopped Mint
The juice of one LEMON
1tsp• Cumin
2tbsp• honey
Around 5 tbsp• olive oil (watch to not make too much dressing)
200g Couscous
Chicken broth (amount depending on Couscous....check the instructions on the box)

Method
Mix the egg and the ground meat together, and add salt, pepper and chilli. Form 10-15 little Kofta rolls out of the meat. Before frying them in the olive oil, roll them in the sesame seeds. (HINT: Make sure you don\'t make too big meats rolls. The sesame seeds do not like the heat very much, and will pop through your whole kitchen. Therefore, the rolls should not fry too long and the meat needs to get done rather quickly.)

Prepare the dressing by mixing the lemon juice with salt and pepper, cumin, honey, cilantro and mint. Whip the oil into the mixture and taste...

Fry the Zucchini slices in some oil. As soon as they start turn slightly brown, add the green onion and nectarines. Fry everything up.

Add the Couscous to the dressing and mix everything well. Mix the Zucchini-Nectarine mixture under the couscous.

Serve the Turkey Koftas over the Couscous-Zucchini Salad.

Perfect with a glass of cold white wine!!
