Oven Roasted Vegetables with Garlic and Basil

For 2 servings:
3 medium potatoes,
1 large red pepper,
1 handful of mushrooms,
3 tbsp extra virgin olive oil,
2 tsp crushed garlic,
1 tsp black pepper ,
2 tsps dried basil or a handful of fresh basil, chopped.
Salt to taste.
1. First, slice the potatoes into thick slices/chunks and parboil for about 3 minutes. Drain and leave to dry out for a few minutes.
2. Slice the peppers, courgettes and mushrooms into thick slices and place on the baking tray with the potatoes.
3.Add the olive oil then flavour with garlic, black pepper, basil and salt . Mix it all in using your hands.
4.Spread it out on the baking tray and cook in the oven at 180 celsius for about 40-50 mins, turning occasionally.
