Those who love raw oysters know once you have had 10+ of the best, like Canadian PEI's Malpeques or New Brunswick's Caraquets (species - crassostrea virginica) you will experiment with various dips and sauces. I tried one recently that will knock your socks off, it is a 50/50 split of apple sauce and rum. Simple, but most things in life are, like raw oysters.
