8 slices of Lardo di Arnad
100 gr of paccheri
200 gr of cherry tomatoes
A small sprig of rosmary
Salt and pepper to taste
Optional: a colve of garlic
In a pan melt 6 slices of Lardo di Arnad, when the lard is seethrough add the halved cherry tomatoes and the sprig of rosmay.
Boil the pasta in a pot of boiling salted water, the paccheri take a long time in comparison to other tipes of pasta.
Once the pasta has cooked toss it in the pan with the lard and cherry tomatoes.
Plate the paccheri decorate with a slice of lard, freshly ground black pepper and a sprig of rosmary.
