Pacific Island Pumpkin Soup

Had this served to me by a friend a number of years ago. Tasted great. Pumpkin is such a versatile ingredient, Sweet or savoury. This is such an experimental soup, of mine of the years. From Italian Flavours to Thai Flavours. Mangoes and possibly pineapple in small amounts may work.

Ingredients
Pumpkin (Jap) Good Flavoured Pumpkin
Chicken/Vegetable stock
1 Passionfruit Pulp (Strain out Seeds)
half a cup of Coconut Milk/Cream
Coriander
A little Cumin
A little Ginger
And A little Tumeric

Method
Chop and Dice Pumpkin, Toast your spices. remove from pan. Start cooking Pumpkin in a little vegetable oil. When starting to cook and soften add, Stock and Spices. Towards end add pulp of Passionfruit. Then add Coconut cream/milk. Cook until pumpkin is blendable. Grad the stick blender and whiz it. Serve with Coriander garnish.
