Pan Seared Salmon Medallions

Ingredients
1 lb salmon fillets

2 tbsp olive oil

Season with salt & pepper

Method
Rinse salmon under cold water. Dry thoroughly with paper towels. Using a cookie cutter or sharp knife, cut out salmon medallions. Season to taste on both sides.



In a skillet over med-high heat, add oil (ensure oil is very hot before you place salmon in skillet). Place salmon in hot oil. Cook salmon for approx 1 minute on one side and for 45 seconds on the other side (both sides should have a golden crust). Centre of salmon should be translucent. Serve as an appetizer. Garnish with spinach and lemon.



Tips:



Don’t let medallions touch each other.
Cook in small batches (don’t over crowd)
