Pasta dough

Pasta dishes are one of my favorite and I like that I do...
I know there are many recipes for pasta, but I would like to share my favorite recipe and I think that is a perfect combination of tasty ...

Ingredients
200 g flour tip \'00\'

1 whole egg

3 egg yolks

1 tbsp extra virgin olove oil

a pinch of sea salt

Method
All you need do is to mix flour with eggs, olive oil and salt. If too dry, sprinkle with water and add flour if too sticky.
It is now important to wrap dough in plastic and leave it in the refrigerator for 30 minutes or until you want to use it. Humidity will bind the dough.
For the dough using a pasta machine. We get a smooth dough and flavored. Add flour if necessary, it does not stick and we\'ll cut to desired shape.
We leave them to dry for another day or we boil water with salt for 1-2 minutes.

We made some pasta on Christmas eve. The pasta we made on the first pass in the machine and which we used fresh was great. To the scrap dough from the offcuts we added some more water and passed it through the machine again. It looked OK at first but as it dried it got darker and darker... any idea why?

I've not been making pasta long. Got myself an Imperia Pasta machine and I love it. Now looking for cool pasta dough recipes. This looks cool.
