Ingredients
2 serves
1 chicken fillet(breast)
180 grm pasta
4 mushrooms(portobello)
1 onion
1 tea sp mustard powder
a touch of saffron
1 1/2 tea sp salt
1/4 tea sp pepper
1/2 tea sp sugar
15 grms grinds of nutmeg
25 grms cognac
200 grms liquid soy (replacement of fresh cream)
50 grm grate Parmesan or other cheese
olive oil
Method
First of all, boil your pasta for 5 minutes in a salty water , then strain the pasta and keep a glass of this water (that you have boiled the pasta in).In this water you may add the saffron.
Chop the fillet in many pieces at least 5 cm long. Chop the onion,the mushrooms and add the sugar,the mustard powder,salt and pepper.
Put all of the ingredients above, in a wide pan and mix them together .
Add olive oil and fry them in a slow fire for 10 minutes,till onion turns gold.
Now its time to add cognac to give its fragrance, in your food. When cognac has been absorbed, add the glass of pasta water that you already kept and also another glass of water. Let your food be cooked for 20 minutes in slow fire and add nutmeg, parmesan and soy(white liquid /if you dont mind about fats you can use cream fresh).
After 5 minutes your food will be ready...
