A very quick and tasty pasta dish
Ingredients
pasta
courgettes
garlic
small jar of anchovies in olive oil
(sundried) tomato paste
extra virgin olive oil
salt, pepper, sweet smoked paprika, mixed herbs
freshly grated parmesan
Method
While the pasta is boiling, chop the courgettes into chunks and finely chop some garlic.
In a saucepan over low to medium heat, cook the chopped anchovies and garlic in oil from the jar (you might have to add some more olive oil if it\'s not enough) until the garlic is soft and the anchovies have dissolved.
Add the courgettes, season with just a little salt (as the anchovies are quite salty already), a generous grind of pepper, some sweet smoked paprika powder, mixed mediterrenaan herbs and a tablespoon of tomato paste. Mix thoroughly, put a lid on and let simmer slowly until the pasta is done.
Drain the pasta, divide among deep plates, add a ladleful of the courgette sauce and grate some parmesan over the top.

Will try today. Sounds just the thing for an aged, short of time, longing for a change diabetic, and I just happen to have most of the ingredients on hand. But will the sauce freeze, and if so, for how long?
