Pasta with lemony salmon and asparagus chunks

This is a great dish for lovers of pasta and fish. It is a very refreshing dish and a healthy dish. Also it is a very quick and easy dish to prepare and cook and reasonably cheap to make.

Ingredients
Serves 1

100g penne pasta
1 Salmon fillet weight about 110g
Bunch of aspargus spears chunked up
1/2 a zest of a small unwaxed lemon
Juice of a small lemon
2 tbsp double cream
1 tbsp Mild olive oil
25g butter
25g grated parmesan
Bunch of parsley
Salt and pepper

Method
Cook 100g penne pasta in boiling salted water about 11 minutes until al a dente.
Whilst pasta is cooking season the salmon and then place the salmon fillet and asparagus spears into a steamer for about 8 minutes until cooked through.
Whilst the everthing is cooking grate half a lemon for its zest and squeeze the lemon for the juice. Measure out 2 tbsp of double cream and 1 tbsp of mild olive oil and weigh out the butter and parmesan. Chop up a bunch of parsely.
Once pasta is done drain the pasta and mix in with the pasta the lemon zest, lemon juice, double cream, oil, butter and parmesan and season to taste with salt and pepper. Then mix in the parsley.
Now take out aspargus chunks from the steamer and mix in with the pasta and then finally place the salmon fillet on top.
Ready to serve.

tasty but we used half the recommended lemon and it was still too lemony. would do this again but without any lemon and less cream.

tried this recipe and it is delicious!! quick to prepare and everyone enjoyed it!! had clean plates all round!! highly recommended!!
