Penne Arrabiata

Penne Arrabiata

Ingredients
SERVES 2

200g dried penne

1 can of chopped tomatoes

3 tbsp olive oil

half an onion, chopped

1 garlic clove, chopped

1 tsp chilli flakes

salt and black pepper

pinch of sugar

grated parmesan, to serve

Method
1. In a saucepan, gently cook the onion and garlic in the olive oil until the onion has softened. Add the chopped tomatoes, chilli flakes and sugar.
Season with salt and pepper and simmer for 25-30 minutes until thickened.
2. Meanwhile, cook the pasta in plenty of salted water until cooked \'al dente\', and then drain the pasta.
3. Add the pasta to the sauce and mix in well. Serve with grated parmesan.

Recently tried Penne Arrabiata in a Glasgow Italian restaurant and thought it was superb.Decided to try to cook it for myself and used your recipe. Turned out great. Thank you Hoppershaun for an excellent recipe that even I could cope with. Added some roasted chicken pieces and it made a great main course<br />

I doubled the recipe but found 2 tsps of chilli flakes too much. It was far too hot. However, heat aside, it was delicious. Thank you Jamie O.

I used fresh tomatoes from my dads garden, an extra garlic clove and some fresh basil and chilli. Lovely. Will use more garlic next time though.

Skip the onion, make the garlic two cloves. Add parsley at the same time as the pasta, and let the pasta absorb the sauce for a minute. Garnish with fresh basil, and burn baby, burn!

Any recommendations for the brand of tomato can? Mine were a bit sweet/sour tasting and it kinda distracted from the overall taste. Can that be compensated by adding other ingredients?

Try adding basil at the beginning just after you have put the garlic in, then instead of salt use a chicken stock cube. Fresh italian tomatoes blended are the best!! After u have cooked the Pasta and it is off the heat throw a dollop of butter into the pasta and mix until it has melted and coated all the pasta. Add sauce and voila!!! This is a top secret recipe!!! Enjoy

I added 1 can of Tomato paste and it made the sauce less watery and a little more "saucy"

Penne Arrabiata is filling food, I'm going mine with bacon Lardons added to the pasta and sauce. Serving with a nice fresh lettuice round salad. Thank you for the simple recipie Jamie, your a star

This recipe is excellent, just add a Tbs or 2 of balsamic vinegar while cooking your tomatoes.

I found the sauce a little watery, is this dependent on the length of time it simmers or the manufacturer?, my local Italian covers this dish with Olives which are plump and juicy when warmed, delicious...Xx
