Put stock vegetables bay leaves and pepper in the pan and add the knuckle. Top up with water until the meat is just covered.
Bring to the boil and simmer for 20 minutes
Add the lentils and simmer for 40 minutes until the lentils are cooked and most of the liquid is absorbed. If more juice is needed add some more stock or water.
Break up the meat and stir. Serve with crusty bread
