1 chicken cut in pieces and without skin
1 cup of bitter orange juice
80 grē of achiote (prepared)
3 table spoons of olive oil
The juice with the annatto and the salt are liquefied, the chicken is baked with the liquefied & olive oil on the top, for 1 hour more or less.
Is served with \"refrid beens\" & basmati rice.
