Pleurotous with herbs and mustard

500 grms of prleurotous mushrooms
1 onion chopped
1/2 glass olive oil
1/2 tea spoon oregano
1/2 tea spoon thyme
1/2 tea spoon sugar
1/2 tea spoon salt
1 glass of white dry wine
1 table spoon mild mustard
basil.mint,and estargon a handful
metsethra grinds(50 grms)
Clean the mushrooms with a wet towel or paper.Do not wash them.Washing the mushrooms makes them tasteless.
Chopped the onion and the mushrooms in many, same size, slices.
Place the onion and the mushrooms in a frying pan with the olive oil.Cook them for 5 minutes in a slow food.
In a different deep plate add sugar,oregano,thyme, salt,mustard and the wine .Mix them well till the mixture turn into a yellow liquid.
Add this liquid in the frying pan,that you already cooking the mushrooms,and set the temperature to a higher level.Cook the food till the sauce get a creamy density.Serve it in a big plate and top it with chopped basil .mint and estargon.You can also add grinds of a cheese you like.
