Plum Muffins

Plum Muffins

Ingredients
For 12 muffins:
250g butter or margarine (melted and cooled)
200g sugar
Pinch of salt
4 eggs
350g flour
2 teaspoons of baking powder
800g Plums
Roasted almonds
Powder sugar for dusting after cooled

Method
Pre-heat the oven to 200°C or 400°F
Grease the muffin baking sheet
Wash the plums and half them
Take the butter/margarine together with the sugar and the salt and whisk it until creamy.
Put one egg at a time to the butter mixture until all four eggs are mixed in.
Mix up flour and baking powder and add to the butter mixture. Don\'t over-whisk the dough..just as with pancakes, little floury chunks are important to make the muffin fluffy in the end.
Fill 1/3 of each muffin form with dough, put half a plum on it and add the rest of the dough in all muffin forms.
For decoration put a small slice of plum on top...or whatever you like for decoration. I also added some roasted almonds on top...whatever you like.

Then bake the muffins for about 25 to 30 minute...toothpick test is the best.

When the muffins are cooled down, dust some powder sugar over them...fertig!

I'm really not sure when/where I should be mixing in the plums - putting half a plum in each muffin isn't going to make any sort of 'dent' in the 800g plums I have prepared! Think I'll just mix them all into the dough and hope for the best!
