Pollo Chilindron (Chilindron Chicken from Aragon)

Ingredients
1 whole chicken
4 ripped tomatoes
2 red peppers
1 onion
2 garlic cloves
100 grams of Serrano ham, in small pieces
Extra virgin olive oil, salt and pepper

Method
I- Cut the chicken in small pieces and add salt and pepper
II- In a frying pan add 4 or 5 tablespoons of extra virgin olive oil. When the oil is hot add the chicken pieces and brown on both sides.
III- While the chicken is cooking, cut in small pieces the onion, garlic and tomatoes. Also cut the peppers in thin strips.
IV- In a separate frying pan fry the garlic and onion.
V- Once the onion has taken colour, add the ham in small pieces, and the strips of pepper.
VI- After it has been cooking for 10 minutes, add the tomatoes in cubes and the white wine.
VII- After 5 minutes, add the chicken and leave cooking at low heat for a further 15 minutes.
