Pork Chops one dish meal

This is a simple dish, but can be served to guests as well as your family. Every one really likes this dish and guests often ask for recipe. My family and guests seem to prefer peas or green beans as the added vegetable.

Ingredients
4 3/4\" pork chops
sliced raw potatoes (8 average sized)
diced onion (1 large)
salt, pepper to taste
chicken broth
vegetable of your choice (canned or fresh)

Method
Slowly brown pork chops in skillet. Remove pork chops from pan. Put diced onions in the skillet and stir them so they are coated with the drippings from the browning proces. Then add potatos and coat them. I add a little of the broth to make it easy to remove the onionns and potatoes. Place the oonions/potato mixture into a casserole dish. ( I use a long rectancular pan so that the chops can be placed seperately.You can serve this dish in the same pan as cooked in.) Stir in you choice of vegetables. Place pork chops on top of mixture. Add chicken broth to just below the pork chops. Bake in 375 oven uncovered until potatoes are tender. (Cooking time will vary according to your altitude -- potatoes take longer at high elevations)

Plate the pork chops, putting potatoes on side. Serve with salad and sliced French bread. Serves four. Since there is just the 2 of us this makes two meals. Just microwave potatoe mxiture without the chops. Then warm chops.

You can also cook this in a large skillet or you may cook it in the crockpot. Just remember to add canned veggies at the end of the cooking cyle. Fresh vegetables can be added in beginning.
