1) Place the meat in a bowl, adding the garlic, chilli. herbs and pepper. 2) Drizzle with a few tbsp of olive oil and massage the herb mix into the pork cubes. 3) Pop it in the fridge and let it marinate for as long as you can ( min. 3-4 hours) 4) When they've finished marinating,season them with a bit of salt, thread them onto skewers and cook on a HOT griddle pan (you won't need any extra oil), turning them regularly, till browned and cooked through (about 10 mins) I served mine with ready made tzatziki, marinated feta cheese(recipe on my blog) and a small lambs lettuce salad with a few extra chillis (preserved in brine). The herb mix also tastes great on pork chops or even lamb :)
