Ingredients
Serves 3- 4
1 whole pork fillet, cut into cubes (about3- 4cm)
2 cloves of garlic, crushed
1 small red chilli,chopped finely.
1 -2 good quality herbal tea bags, containing fennel seed, aniseed and caraway seeds
(you can buy them ready mixed in a herbal/wholefoods shop) or use a 1/4- 1/2 tsp (crushed) of each herb if you have them.
Some salt and black pepper to season.
Olive oil for drizzling.
Some toasted pitta breads for serving.
Method
1) Place the meat in a bowl, adding the garlic, chilli. herbs and pepper.
2) Drizzle with a few tbsp of olive oil and massage the herb mix into the pork cubes.
3) Pop it in the fridge and let it marinate for as long as you can ( min. 3-4 hours)
4) When they've finished marinating,season them with a bit of salt, thread them onto skewers and cook on a HOT griddle pan (you won't need any extra oil), turning them regularly, till browned and cooked through (about 10 mins)
I served mine with ready made tzatziki, marinated feta cheese(recipe on my blog) and a small lambs lettuce salad with a few extra chillis (preserved in brine). The herb mix also tastes great on pork chops or even lamb :)
