Pork and Bacon Patties

These patties are very quick to make for a BBQ or for breakfast and are delicious. No salt is required as the bacon contains enough. These will also take kindly to chilli, so can be spiced up if you want.

Ingredients
500g Pork mince
500g diced bacon
fresh ground pepper
1 beaten egg
herbs of your choice, I prefer sage.

Method
Put the Pork and bacon in a mixing bowl and using your hands mix them thoroughly.
Add the beaten egg and mix again.
Flatten the mixture down then push your fingers well down into the mixture a few times to leave deep holes. (This is a trick I learned making sausages to mix everything much faster)
Sprinkle your herbs and a good amount of pepper over the meat ensuring the herbs get into the holes, then mix by hand again.
Gently fry a small amount to test the taste and adjust the seasoning and herbs if required.
Make 10 100g patties from the mix and either BBQ or shallow fry them.
They can also be made into skinless sausages.
