Pork and Pecan Rissoles

A flavour packed rissole suitable as a hamburger pattie or with vegetables

Ingredients
400g Pork Mince
2 Bacon Rashers (Rind Removed and roughly chopped)
½ White onion (Roughly Chopped)
1 tablespoon plain wheat flour
1 teaspoon Salt
½ teaspoon Ground white pepper
1 tablespoon Fresh Thyme (Picked and Chopped)
180g Pecan Meal (or place pecans in a food processor until you form a meal)

Method
1. Place bacon, onion, flour, salt, pepper and thyme into a food processor and pulse until evenly blended and is still slightly chunky
2. Add the bacon and onion mix to the mince in a bowl and mix
3. Add the pecan meal and mix thoroughly
4. Roll up into rissoles and place in the refrigerator for 30 minutes
5. Cook in a fry pan until thoroughly cooked through.
6. Serve with vegetables or on a hamburger bun with salad
