An unusual combination of flavors (sometimesI wonder how I came up with this) that makes a beautifull dish. The strawberries bring out the sweetness of the meat and the flavours of the cinnamon and cloves (traditional seasoning for pork in Brazil). I strongly recomend trying it. Goes well with plain rice or pasta.
1kg pork loin
1 red onion
Handfull of fennel
2 cups strawberries
1 1/2 cup black olives (desseded)
Salt, pepper, cinnamon and cloves to season
Season the pork with salt, pepper, cloves and cinnamon. Try do do that the day before yo cook it. Get a pan that has a lid nd that can go to the oven. Heat in the gas and put the loin in. Let it cook for a minute or so on each side. Take the meat out and add some olive oil and the onion finely chopped. Cook it for about 10 minutes and then add the fennel, the strawberries roughly chopped and the olives. Let it cook for a while and add a splash of balsamic vinegar. Put the loin back in, add some water if necessary, put the lid on and take it to the oven on medium heat for about 40 minutes. Take the lid off and let it brown for 10 minutes. Take the loin out to slice it and add some butter to the sauce to make it silky.
