Prawn Bacon and chilli Tagliatelle

Lovely light and fresh pasta dish . Lovely served with a green salad, garlic bread and a bottle of rose.

Ingredients
1 x Pack fresh prawns

1 tub arrabiata pasta sauce

1 tub Tomato and mascapone sauce.

3 - 4 cloves garlic

1 onion

1 x Buffalo Mozzarella

4 rashers bacon

Chicken stock 1/ 4 pint

1 teaspoon dry chilli flakes

Salt and pepper to season

1 tablespoon olive oil

1 glass white or rose wine

Parmesan

Method
Chop up onion and garlic and in a large pan heat oil. When the oil is hot put in onions and garlic and cook till transparent. Chop bacon into medium sized pieces and add this to the pan and cook.
When the bacon is cooked add the sauces ( I find it is easier to use the ready made ones but I suppose they could be made fresh) stir around to ensure properly mixed. Add the chilli flakes at this stage. Ensure it is properly cooked through then add the wine and stock and let it bubble for 10 mins to cook out the alcohol and so the sauce thickens too. Add the mozzarella torn into pieces and let this slowly melt into the sauce. Add the prawns to the sauce and let them heat through.
Meanwhile put some water on to boil and add a drizzle of olive oil and stir and salt to season and when it is boiling add the pasta (I find that fresh egg pasta is the best.) When it is cooked drain and keep warm.

Mix the sauce with the pasta and serve up.

Sit back and enjoy.
