Prawn and sweet chilli tartlets

These are deliciously moreish, and excellent for parties or picnics.

Ingredients
1 quantity polenta pastry
250g king prawns
1 small tub cream cheese
sweet chilli dipping sauce
coriander leaves to decorate (optional)

Method
Roll the pastry thinly and cut into rounds. Carefully insert these into greased mini muffin trays, then line and weight down with baking beans or rice and bake in a hot oven (Gas 7, 180C, top right Aga) for 8 minutes until crisp and golden.

Remove the lining carefully, then remove the tartlet cases from the tray and cool on a wire rack.

Just before serving, fill with a teaspoonful of cream cheese, a dollop of sweet chilli sauce and top with a prawn. Decorate with a coriander leaf if desired. Serve as quickly as possible, as the pastry will go soggy otherwise.
