Qudillaus

Ingredients
1 Red onion

1 Half of red chilli

1 Pack of tortillas

2 Organic egg\'s or Free range

Sprinkle of parsley

Drizzel of oli

Salt and Pepper

Method
Get a medium to large size pan heat the pan on a medium heat, add a drizel of oil move the pan around to get the oil around the whole pan then get 2 tortillas ready but first boil 2 egg\'s on a low to medium heat and cook them nice and slow for about 5 minute\'s and when there cooked put them in some cold water straight away to stop the cooking prosess! then crack the egg on all side\'s and peel them then rince under cold water. now mash them with a dollop of butter and salt and pepper i mash with a fork to get the tecture better then add the mashed egg to the tortilla and spread the mix then add some finley chopped chilli and some sliced red onion and a little sprinkle of parsley use fresh or dried! now add some already gratted cheese and then add the other tortilla lid as i call it then push on it really hard then put in the pan and cook on each side for about 3 minutes and 30 second\'s and while your cooking the tortilla\'s keep on pushing the tortilla\'s down, then get them out and let it sit for a minute then slice it in half and then half again! now if you want you can serve with some sauce or dip but i keep it rustic and simple and i just add a little raw red onion sometime\'s it make\'s a nice difference and tecture! it\'s beautiful 4 slices of tortillas feed\'s 8 people but if greedy 4 people :)
