My son Shiloh came home from Mackay , Queensland for Christmas and he cooked this meal. Which results in the most moist, succulent flavoursome roast chicken dinner ever!
I chicken 1kg to 2 & 1/2 kg
1 piece of Pumpkin cut into 4
Potatoes cut into 8
whole garlic end chopped off
orange sweet potato cut into 4
1 bunch of asparagus
2 carrots cut into 4
1/2 can of XXXX( or any brand) beer
Place 1/2 can of beer in middle of roasting tin, surround with vegetables. Coat chicken in olive oil, salt and pepper and any favourite herbs.Place chicken on beer can with legs hanging downwards. drizzle olive oil over vegetables. Place roasting tin on bottom rack of oven and cook at 180C till chicken is golden and can move the chicken legs easily. Delish!
