Add dried fruit to a small pan along with the brandy and simmer gently for a few minutes until brandy has been absorbed set aside to cool. Cream the butter and sugar together then beat in the eggs one at a time, stir through the treacle.
Sift in the flour and baking powder then gently fold through along with the mixed spice. Finally spoon the mixture into the prepared tin and bake for 1hr 15mins.
Allow to cool in the tin for 5mins then turn out on to a cooling rack.
To make the icing whisk the egg whites until stiff peaks then while whisking add in the icing continuing to whisk until you have a stiff shiny meringue icing.
Lastly decorate your cake with all things Christmas.
