A quick Teriyaki marinade which gives salmon a wonderful kick and a savoury bite
Ingredients
Salmon fillets
Teriyaki sauce
Lime
Honey
Groundnut Oil
Tabasco
Method
Mix all the marinade ingredients in a bowl. It is best to experiment with quantities as some people prefer sweet (honey) salty (teriyaki) sour (lime juice) hot (tabasco) - I normally go with a good slug of teriyaki, juice of half a lime, tablespoon of honey and 5 or 6 drops of tabasco.
Leave the salmon in the marinade for 30 mins - 1 hour
Remove from marinade and reserve
Cook the salmon in a frying pan - I prefer to have my salmon rare/raw in the middle for a more Japanese feel.
Remove salmon from frying pan and leave to rest. Deglaze the pan by turning up to hottest temp and throwing in the reserved marinade. Reduce the marinade to a sticky consistency.
Pour over salmon and serve with white rice.
