Quinoa and Tumeric salad

The whole thing will take you 20 mins to prepare and cook, plus another hour or so in the fridge. Although I have to say, I start eating it right away!. It\'s great to take on it\'s own to work for lunch, or as a snack on it\'s own. Also use as a side dish.

Ingredients
8oz quinoa - you can use either the regular white variety, or the slightly harder to find red• The red has a nuttier taste.
Juice of half a lemon
1 tblsp of flax seed oil
A sprinkle of ground turmeric
1/2 a red pepper seeded and chopped
4 mushrooms chopped into small pieces
A sprinkle of sea salt and fresh ground black pepper - to taste

Method
Cook the quinoa in enough water to cover it in a saucepan with a lid on medium heat for approx 10 mins. It is cooked when the seeds open up and soften. Then drain using a wire sieve and run-through with cold water. Leave it in the sieve to drain. Allow to completely cool. Then tip it into a small mixing bowl and add the rest of the ingredients. Stir well with a metal spoon, cover and pop in the fridge for say 1/2 an hour so all those flavours get to mix. Then serve and enjoy.

well hunnie that was delicious how can i thank you enough i made it for my grandchildren when they came over to visit and they absolutely loved it
