Raisin and plum porridge

So it is berry PORRIDGE not soup. It is no baby food. Usually mansion servant girls in Estonia and Finland (Viipuri, Karelia) used to eat semolina porridge with raisins. Sweet life...

Ingredients
for each eater
a handful of chopped dried plums
a handful of different colored raisins
1 tbsp sugar
1 tbsp lemon juice
1 tsp grated lemon zest
1 tsp grated orange zest or candied orange peel
5 tbsp semolina
2 tbsp cold water

Method
Put plums in a thick layered cooking vessel. Pour over boiling water, cook on medium heat until softened (5 to 7 minutes). add sugar, lemon zest, orange and lemon juice. Add raisins, cook one minute. Mix semolina with cold water and ladd to the boiling soup, stir. Mixing with cold water like you do with potato starch helps avoid lumps with semolina. cook a few minutes, remove from heat and let cool. eat with cold milk or espresso.
