This is a soup that I usually eat whenever I feel unwell and am picky with food. I also eat it after I have been training iin my Taekwondo class to replace those vital calories to keep a healthy weight. This soup requires very little effort.
Ingredients
2 cups of rinsed Red Lentils
1 1/2 pints of Vegetable Stock
1 large peeled and chopped Carrot
2 baby Potatoes peeled and grated
Rosemary
Salt and Pepper
Method
Rinse the lentils with cold running water before adding to the pot.
Make 1 1/2 pints of vegetable stock and warm for 5 minutes on a medium heat - do not allow to boil! Add the lentils and cook for 15 minutes. Chop the carrot and grate the potatoes after peeling. Afer the 15 minutes have gone add the vegetables to the pot and stir to combine thoroughly. Cook for a further 10 minutes before adding the Rosemary, salt and pepper. When the herbs and seasoning are added stir well and cook for a further 15 minutes on a gentle simmer, occassionally stirring.
If any scum appears on top of the soup use a large spoon to skim it off and dispose of it.
